Its story starts on conifer trees. Bees collect the honeydew found on them, transform it and leave it in the comb to mature. Its colour may be grey-green, amber or even almost black; after crystallisation the honey usually becomes lighter.

Pair it with dark bread, mature cheese, marinades, glazes or savoury sauces. Try it whenever ordinary sweetness would feel too simple and a deeper, resinous character is called for.
